Welcome to RJC’s Recipe Corner! Cooking is a passion for me. It’s something I enjoy. It brings many great memories and experiences to mind. On RJC’s Recipe Corner, I will reminisce about, I will add some of my favorite recipes to this page.

I have a rule, I don’t often order food from a restaurant menu that I regularly cook. There are some exceptions to that rule, of course. If a restaurant or a chef are known for a certain dish, there is no way I won’t give it a try, but for the most part I stand by my rule.

This little delight was paired with the Linda Horn Cabernet Franc. That wine brought out the meatiness of the mushrooms and blended the oregano, coriander and paprika, with the richness of the onions & garlic. Try my Chicken & Mushrooms. And to go with a special dinner as well as, any light meal, add my North Carolina Soda Pop Cake.

Recipes to Add a Little Savory

This is a great appetizer, side-dish or a good lunch, dinner. You can modify the dish to your taste. Perhaps focus on making it a plant-based or vegan meal. Additionally, this is the perfect food for the big game or backyard BBQ. Try the Stuffed Mushrooms

Spice it up on the weekend or any day of the week with a little at home Mexican Food. Also good for game day. The Fajita Bake – This is one of our favorite meals. Also, for those working hard at home or outside the home, you can make this dish ahead to time. I always keep the vegetable topping/salad fixin’s chopped, mixed and ready in a container in the fridge. That why you can add it to a meal or make it a meal – you choose. The kiddos have fun with these too! I’ve found keeping kids interested and engaged in the food they are eating will help them make healthy choices.
