North Carolina Soda Pop Cake

This is one of the easiest and fun cakes or cupcakes to make with my grandkids. There are two simple ingredients for the North Carolina Soda Pop Cake. There are three simple ingredients for the frosting.

We used the North Carolina favorite and oldest continuing soft drink, run by the same family, the original cherry soda – Cheerwine™. Cheerwine™ was created by L.D Peeler in 1917, in Salisbury, North Carolina. The story is told that this soft drink was developed amongst a sugar shortage. Their slogan “Smile, DRINK Cheerwine It’s Full of Good Cheer”©

North Carolina Soda Pop Cake

  • 1 box of white cake mix (brand of your choice) – sift in a bowl.
  • 1 12 oz. bottle of Cheerwine

Mix well either by hand or with a mixer.

Pour into a pan coated with cooking spray, butter or shortening.

Bake following the directions on the box.

I used a 9×9 square pan and baked the cake at 350° for 35 minutes. Let cool.

Frosting

  • 1 Cup of Unsalted Butter Softened
  • 1 Tablespoon of Vanilla Extract or 2 Tablespoons of Instant Vanilla Pudding Mix
  • 1 14 ounce can of sweetened condensed milk

Blend well place in the refrigerator for 30 minutes. Pull out the frosting and let it set to room temperature.

Once the cake is completely cool, (about an hour). Frost the cake.

This light cherry flavored cake is quick, fun and easy to make. I’ll never forget the first time I saw my grandson’s face when I pour soda pop into the bowl. It turned out to be one of his favorite desserts. And on a side note, my husband who rarely eats anything sweet except for my PeanutButter cookies or my chocolate cake, likes this one too!
