Baileys Chocolate Strawberry Shortcake

Baileys Chocolate Strawberry Shortcake offers a new twist on a classic favorite, with a bonus. And who doesn’t love a chocolate covered strawberry? Think back on your favorite memory of strawberry shortcake. Then remember the first time you had a chocolate covered strawberry. That perfect taste of sweet and tart. Baileys Chocolate Strawberry Shortcake is a scrumptious combination of both desserts in one. Baileys Chocolate Strawberry Shortcake offers the ultimate taste of Irish Cream added to the sweet and tart, but on the lighter side. Bonus – it’s pretty too.

Start With

  • 2 Quarts – Fresh Strawberries, hulled, washed and sliced.
  • 1/2 Cup Light Brown Sugar

Toss the strawberries in sugar and refrigerate.

Add

  • English Biscuits, Angel Food Cake or Dessert Cups
  • Chocolate Pudding Made with 2 parts Bailey’s Irish Cream and 1-part Milk.

English Biscuits Recipe

  • 6 Tbls. Unsalted Butter
  • 3/4 Cup of Ice-Cold Milk
  • 1 Tbls. of *Baking Powder
  • 2-4 Tbls of Sugar (too taste)
  • 1 Teaspoon of Salt
  • 1 Teaspoon Pure Vanilla or Almond Extract

Traditional English Biscuits do not call for Baking Powder. They were created during the 19th century. It was a way to add fiber to the Victorian diet. The early recipe is still made today, and some call it a digestive biscuit. (I personally do not find that description appetizing, even considering my English heritage on my mom’s side). English Biscuits are traditionally flat and are served with a glaze, honey or sweet jellies, jams and fruit. They are frequently served at teatime. (Traditionally between 3:30 and 5 – before dinner). Hint – the colder the butter as well as the milk, the better for this recipe. *Only add the Baking Powder if you want fluffy biscuits.

Deviations

No time to bake – grab a store-bought Angel Food Cake, or dessert cups. Both will serve the purpose. Can you say – Culinary Delight?

Filling

  • A Large Box of Instant Chocolate Pudding
  • Add two cups of Baileys Irish Cream
  • Add one cup of milk

Whisk until well blended, then refrigerate.

Notes:

Using homemade chocolate pudding or cook & serve pudding will reduce the alcohol and make the dish family friendly.
