What is better on a warm summer day than a light Garlic Shrimp dinner? I put this together quickly and it turned out to be a hit with my family. We live in Florida where seafood is plentiful. So why not use it. What’s for dinner? My favorite response is “reservation” but not tonight. Tonight, I made Garlic Shrimp.
- 2 lbs of fresh Shimp (medium to large)
- 2 cups of fresh baby spinach
- Broccoli
- 3 cloves fresh garlic, minced
- Fresh basil leaves to taste
- 2 Tbls of EVOO
- A sprinkle of ground sea salt
- Whole Grain Thin Spaghetti or Angel Hair Pasta
- Parmesan Cheese
Boil water to cook the pasta, rinse and drain. Brown half the garlic, basil, spinach, broccoli in 1 Tbls EVOO, set aside.
Brown the shrimp, other half of garlic, basil, the sea salt in 1 Tbls EVOO. Toss the cooked Shimp and Veggies with the pasta in a large serving bowl.
Plate, then sprinkle with basil and parmesan cheese.
Other Options
You can always change this up by making a chicken, beef or spicy pork dish. Throw in your favorite vegetables and even change the spices your favorite taste.
You can always make your dishes look special by adding a little umph to the table scape.
