Cannoli-Chardonnay Torte

I learned to love to cook and bake at an early age.  Cooking Food & Wine are a passion of mine and Cannoli-Chardonnay Torte is a family favorite. Being the youngest of four, my mom went to work when I was 2.  I spent a lot of time with my maternal grandparents and older siblings. That helped me to learn on my feet.  Cooking and baking came easy to me and making new desserts like Cannoli-Chardonnay Torte.  Since my mom never really enjoyed cooking, I fell into the role.  I learned to experiment with different dishes and styles.  My mom made a handful of standard dishes continuously.  Monday was meatloaf, Tuesday was chicken, etc. And always the same way.  When I took over and into today, I try to spice things up both figuratively and literally. 

I like to use and pair Cannoli Chardonnay Torte with Moonlight Chardonnay found in our Wine of the Month Club.

Cannoli-Chardonnay Torte Ingredients

White Cake Mix (or homemade, I like Lady Baltimore with the substitutions below)

Vanilla Pudding (Dry) (I do not use instant)

A pinch of cinnamon

A large pinch of orange zest

Water – ½ Cup

Cup Dry White Chardonnay 1/2 Cup (I used Wine Ambassadors very own Moonlight Sonata 2019 Sonoma Coast Chardonnay)

Canola Oil – ½ Cup

3 Cage Free Brown Egg Whites

Mix, pour into a dark torte pan, bake at 325° for 25-30 minutes depending on your oven

Cool completely – pan room temperature to the touch

Flip onto tray

Cannoli Filing

32oz of Ricotta Cheese

16oz of Mascarpone Cheese

1 to ¼ Cup Confectioner’s (Powdered) Sugar (to your taste) (I used 1 Cup)

1 to 1 ½ tsp. Orange Zest (to your taste)

1 tsp of Almond or Vanilla Extract (I used Almond)

½ tsp of ground cinnamon

6 ounces+ Mini Semi-Sweet Chocolate Chips

Blend the cheeses, sugar and spices.  Fold in the Chocolate Chips.

Spread into the Torte. 

Lightly dust with Confectioner’s (Powdered) Sugar, mini-chocolate chips and a few sprinkles of cinnamon

When paired with the Moonlight Sonata 2019 Sonoma Coast Chardonnay you can taste subtle hints of orange and cinnamon with bolder flavors of vanilla and chocolate finish.
